Our baseline nutritional information is as follows. This is not done via a lab but just basic mathematics so all numbers are approximations with our current ingredients for seitan:

Main ingredients in seitan are: Vital Wheat Gluten, Red or White beans, Tomato paste, vegetable (Soy) oil, vegetable broth herbs & spices including mushroom.

All sliced seitan is good for approximately 2 weeks if wrapped air tight and stored in the refrigerator. Air and moisture are the two biggest enemies when keeping seitan fresh so keep it stored nice and tight and cold. We do not suggest freezing sliced seitan after being opened from its vacuum sealed package, as it changes the texture when defrosted. Feel free to freeze if its still in its original packaging.

All deli case salads are made fresh in house and rotated daily / weekly. The date you see on your deli case container is the day the item was made. We stick to a 7-10 day freshness schedule on all deli case items. This does not mean after 7 days or on the 7th day our items are "bad" this is merely a standard we use to make sure our food is enjoyed as quickly and fresh as possible.  Some items like the Olive Medley, Cabbage Apple Beet salad and Buffalo Dip will stay fresh longer than 10 days however we highly suggest you enjoy your items as soon as you can. We do not use any preservatives in any items so our motto is to eat it fast and enjoy, so you don't worry about expiration dates. 

Allergy information:

All seitan contains soy and wheat.

The mayonnaise we use in our deli salads contains soy.

Our Cannonball and Haas Style Buffalo chicken are gluten free made from soy.

Some deli case item contain mushroom seasoning. Please inform our staff if you have any allergies before ordering.
